Waikulu Distillery on Maui: A Sip of Innovation Rooted in Tradition

The Waikulu Distillery redefines what it means to honor tradition while forging new paths. Their approach is beautifully simple yet profoundly thoughtful. They incorporate traditional fermentation techniques and methods of making tequila (once known as “Mexican Whiskey”) which is inspired by the historic art of making a beautifully crafted spirit.
As the Distillery notes: “Agave spirit is technically any distilled spirit made from the agave plant. There are many varieties of agave and many types of agave spirits. The most notable are tequila and mezcal, which are produced only in certain regions of Mexico and protected by Appellation of Origin Rights. These rights are an international agreement which give exclusivity to a county’s legacy products such as champagne, Roquefort cheese, Cognac and many others.”
So even if a spirit is made from the same agave plant with the same methods, it cannot be called tequila. For Waikulu, it called Agave Spirit.
The Waikulu methods are traditional of the agave tale of Mexico yet, every choice they make reflects a reverence for both Mexico and our Maui land. For instance, the key ingredient, blue agave, is locally sourced celebrating Maui’s natural abundance to grow unique but value-adding agricultural products. We are so very fortunate.
